Great Holiday Recipes!

Even though here in NC, it is a hot and humid 90 degrees outside, I am trying to get a jump start on planning for the holidays. I came across some of my favorite recipes given to me by family and friends, and thought I'd share! Feel free to do the same!

In this posting there are the following recipes:

Wassail
Simple Peach Cobbler
Cinnamon Butter
Cheesy Green Bean Casserole
Sausage Balls
Southern Pecan Pie
Caramel Corn
Hummingbird Cake
Peanut Butter Cookies

*****************************

Wassail

2 quarts sweet apple cider
2 cups orange juice (Simply Orange is our family favorite!)
1 cup lemon juice
5 cups pineapple juice
1 cup sugar
1 cinnamon stick
1 tsp. whole cloves

Combine all ingredients in saucepan and bring just to a boil. Remove from heat and strain to remove spices (or just use a cheesecloth). Simmer. Serve hot. Makes 16 cups.

Simple Peach Cobbler

1 large can sliced peaches with syrup
1 egg
Butter
1 cup Bisquick
1 cup sugar
Cinnamon

Pour peaches into 11 ¼ x 7 ½ inch baking pan. Mix Bisquick, sugar and egg into crumbly stage and sprinkle on top of peaches. Sprinkle with cinnamon. Dot with butter and bake at 350 degrees until brown, about 35-45 minutes.

***I usually double the recipe for holiday parties. Top with vanilla ice cream (Breyers Creamy Vanilla is the best!).

Cinnamon Butter

1-1/2 cups
1/2 cup (1 stick) butter, softened
2 cups confectioners' sugar
1-1/2 teaspoons ground cinnamon

1. In a large bowl, beat the butter with an electric mixer until whipped. Beat in the sugar and cinnamon until well combined.
2. Serve immediately, or cover and chill until ready to serve. Soften a bit just before serving.

SERVING TIPS: Use this as a spread for breads and pastries, or to add pizzazz to cooked chicken or fish.

Cheesy Green Bean Casserole

4 cans French style green beans
2 cans cream of mushroom soup
1 cup bean broth (from green beans)
4 cups cheddar cheese
1 large can French’s French Fried Onions


In bowl mix together soup, 2 cups cheddar cheese and bean broth. In a casserole dish put in one layer (2 cans) green beans. Put a layer of soup mixture on beans. Put a layer of French fried onions over beans. Add another layer (2 cans) of beans. Then add remaining soup mixture and another layer of French fried onions. Cover with 2 cups of cheddar cheese. Bake at 350 degrees for 35-45 minutes. This makes enough for a holiday or party dish. Enjoy!

Sausage Balls (Family Favorite!)

1 lb. sausage
1 lb. mild cheese, grated
3 cups Bisquick mix

Mix with hands. Form into walnut size balls.
Bake at 350 degrees for 10 minutes.

***These freeze well! My Nannie (grnadmother)makes these every year, and we LOVE them!

Southern Pecan Pie

1 cup sugar
3 eggs
2 Tbsp. flour
3/4 cup dark corn syrup
2 Tbsp. butter
1 tsp. vanilla
1 1/2 cups large pecan pieces
Unbaked pie shell

Mix all together and pour into unbaked pie shell.
Bake at 275 to 300 degrees for 1 hour.

Caramel Corn

About 8 cups

8 cups plain popped popcorn (unpopped kernels discarded)
1 cup peanuts
1 large clean brown paper grocery bag
1/2 cup (1 stick) butter, cut into chunks
3/4 cup packed brown sugar
1/4 cup light corn syrup
1/2 teaspoon salt
1 teaspoon baking soda

Place the popped popcorn and peanuts in the grocery bag.
In a microwave-safe large bowl, combine the butter, brown sugar, corn syrup, and salt. Microwave for 2 minutes; stir then microwave for 2 more minutes.

Add the baking soda, stirring until thickened. Mixture will turn light in color and look like taffy. Pour mixture over the popcorn and peanuts in the bag; close bag and shake well.

Pour the popcorn mixture into the bowl and microwave for 1-1/2 minutes; stir then microwave for 1-1/2 more minutes. Pour into the paper bag and shake well.

Repeat Step 4 then spread the popcorn mixture onto baking sheets and allow to cool completely. Serve, or store in an airtight container until ready to serve.

Hummingbird Cake

3 cups all purpose flour
1 tsp. baking soda
½ tsp. salt
2 cups sugar
1 tsp. ground cinnamon
3 eggs, beaten
¾ cup vegetable oil
1 ½ tsp. vanilla extract
1- 8 oz. can crushed pineapple, untrained
1 cup chopped pecans
1 ¾ cup mashed bananas
½ cup chopped pecans
***Cream Cheese Frosting


Combine first 5 ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans, and bananas.

Pour batter into 3 greased and floured 9 in. round cake pans.

Bake at 350 degrees for 23-28 minutes, or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes, remove from pans and let cool completely on wire racks.

Stir ½ cup pecans into cream cheese frosting if desired, or reserve them to sprinkle on top of frosted cake. Spread frosting between layers and on top and sides of cake. Yield: One 3 layer cake.

***Cream Cheese Frosting
½ cup butter, softened
1- 8 oz package of cream cheese, softened
1- 16 oz package powdered sugar, sifted
1 tsp. vanilla extract

Cream butter and softened cream cheese. Gradually add powdered sugar, beat until light and fluffy.
Stir in vanilla extract.

Peanut Butter Cookies

½ cup margarine or butter
½ cup peanut butter
1 ¼ cups all-purpose flour
½ cup sugar
½ cup packed brown sugar or ¼ cup honey
1 egg
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon vanilla
Sugar

In a mixing bowl beat margarine and peanut butter with an electric mixer on medium to high speed for 30 seconds. Add ½ cup of flour, sugar, egg, baking soda, baking powder, and vanilla. Beat till thoroughly combined. Beat in remaining flour. If necessary, cover and chill dough till easy to handle.

Shape dough into 1-inch balls. If desired, roll in additional sugar. Place 2 inches apart on an ungreased cookie sheet. Flatten by crisscrossing with the tines of a fork.

Bake in a 375 degree oven for 7 to 9 minutes or till bottoms are lightly browned. Cool cookies on a wire rack. Makes about 36 cookies.

Chocolate-Kiss Peanut Butter Cookies:
Prepare as above, except do not flatten with a fork before baking. Press 1 milk chocolate kiss into each cookie.

Homemade Christmas Ornaments

My tween and I enjoy doing these each year....to add to our tree and to give as gifts. We have so much fun! Just wanted to share! My friends passed these on to me, and I am sharing them with you! Have FUN!

In this posting there are recipes for:

Bake Art Dough
Scented Cinnamon Ornaments

Bake-Art Dough

4 cups unsifted all-purpose flour
1 cup salt
1 ½ cups water

Blend flour and salt, add water and stir. When water is mixed in, shape dough into a ball. Knead dough about 5 minutes or until texture is smooth and pliable. Add more flour if dough is sticky, add more water is dough is crumbly. Roll dough out on lightly floured surface to 1/8” . Cut out ornaments and place on cookie sheet. Bake at 350 degrees for approx. 20-25 minutes. With spatula remove baked pieces to cooling rack and allow to cool completely. Store unused dough in plastic wrap. Makes approx. 3 dozen shapes.

NOTE: Bake-Art dough is for decorating purposes only such as ornaments and magnets, it is not edible.

TIPS:

To make ornaments, cut a small hole near the top of cut-out design using a straw before baking. Thread with colored ribbon if desired.

After your Bake-Art pieces are cool, decorate with non-toxic paint, glue on decorations and glitter.

Scented Cinnamon Ornaments

4 oz Cinnamon
1 tbsp Cloves
1 tbsp Nutmeg
3/4 cup Applesauce
2 tbsp White glue
Ribbon


In medium bowl, combine cinnamon, cloves, and nutmeg. Add
applesauce and glue; stir to combine. Work mixture with hands 2 to 3
minutes or until dough is smooth and ingredients are thoroughly
mixed. Divide into 4 portions. On floured surface, roll each portion
to 1/4 inch thickness. Cut dough with floured cookie cutters of
desired shapes. Using straw or toothpick, make a small hole in the
top of the ornament. Place cutouts on wire racks and allow to dry at
room temperature for several days or dry them in a dehydrator. Thread
ribbon through hole in ornament. DO NOT EAT. Makes about 32 (2 inch)
ornaments.

I Feel Loved!

It is now after 2:30 am, and I am still up working. Why am I still awake at this ungodly hour? Little Miss and Little Princess have been giving this Mama a run for her money!

Speaking of money, I am pleased to announce I am making money online! The last couple of years I have been working in my spare time with Moms United in Business (MUIB), an organization I founded to help WAHMs network and find support and friendship all Moms at home desperately crave and need. I decided it was time I too, begin to make some money for myself!

I have found many different avenues for making money online, from writing articles to charging for advertising for ads placed on the MUIB website and newsletter for non-members (members receive free advertising, a perk for helping MUIB continue to grow and be the success it is today). I have come across a new venture I am so excited about through blogsvertise. Getting paid to do what I love to do....getting paid to blog.

Blogsvertise in my personal opinion, is a win win situation. Both parties involved get something beneficial out of the deal, and to me that's a good thing, my friends!

I am always researching new avenues to make a bit of money online, and what I have found is that truly in all honesty you are going to have to work for EVERY dollar you make. I am not a very crafty Mama, and I am not into selling or making products to sell, but I do love to write and have a way with words, so writing is the avenue I have chosen to make some money. Paid surveys and such to me are a waste of time, and my precious free time is limited having to take care of my tween, my toddler and my newborn!

Well, I must close for now...Little Miss is up AGAIN...needing some Mama love! Is this child of mine teething again?????? Waking up off and on like this is just not like her!

It's About Time, Dad!

My Dad just called and shared the news...He and my soon-to-be StepMama have FINALLY set a date! Daddy's getting married! It's about time!

We are all so excited. They have been together for what? 6 years now? Dad just recently sold my childhood home, and I could not for the life of me, go to the house to say goodbye. So many memories there, some good that I will cherish for a lifetime, and yet others I wish I could forget. I was also about to have our newest little miracle, Sarah Nicole and I just was not up to going due to both physical and emotional reasons.

It is indeed a new beginning, for all of us. Change is indeed part of life's journey, is it not?

A Constant Struggle

It is so easy to lose yourself. I have a constant struggle trying to hang on to who I am as I play out the roles in my daily life as a wife and mother. I love my husband, he is an absolute godsend, and I love my children, they are my ultimate blessings.

However, I feel deep down that I am meant to do something outside of these roles with my life. I just struggle with trying to find out what that is. I guess, deep down, we all are searching for our purpose, our destiny. It is just part of the human condition.

Being human. That's difficult sometimes, isn't it? We strive daily for perfection, only to find that no, we are not perfect. All we can do is the best we can do, and try with all of our might to accept that.

I am a perfectionist at heart. Always have been. One of my downfalls as a perfectionist is that it often leads to procrastination which then leads to paralysis. If I can't do it perfectly, then I don't do it at all.

Not a very savvy way to get things accomplished, now is it? I am trying to not be so hard on myself. To accept myself for who I am and be open to the possibilities life has to offer. If I do nothing, I have failed. Yet sometimes failure is easier to deal with then success. If we fail, we can always find someone, anyone else to blame...and usually that someone is ourselves.

I know, I for one, need to become as forgiving of myself as I am of others. To not feel guilty when I fail to be perfect.

Perfection is overrated. It is I think, easier to just be me. At least that's what I continue to tell myself.

I want to be authentic, be the woman I am meant to be, and learn to accept myself, faults and all. I think, my friends, this is going to be a lifelong process.

Addicted to Blogging

I am addicted to blogging. I admit it. I claim it. I love meeting new people, "hearing" ideas and comments from others, and the social interaction of all of my online endeavors.

As a SAHM, being online offers me a connection I crave with the outside world. I think at times it is the only thing that keeps me sane.

How Do YOU See Yourself

Outside of being a wife, mother, sister, daughter and/or friend, how do you really see yourself? I ask, because we seem to get so wrapped up in our roles in life that we forget, or neglect to find out who we truly are...myself included. My husband had a friend stop by for a visit last weekend, and he brought his new girlfriend. The new girlfriend was very nice, but I know I must have bored her! She does not have any children, and I caught myself going on and on about my kids. It hit me, is this all I am...a mom? Can't I find something else to talk about? Has it been so long that I have been out of the loop that I have forgotten how to be interesting?

Don't get me wrong. I LOVE being a wife and mother. With a tween, a toddler and a newborn, my life does indeed revolve around my children. I had not noticed this about myself before, because usually I encounter Moms, and of course we are thrilled to discuss our kids.

Just curious, how do you define yourself outside of the various roles you play out in life?

Me? I am a passionate and tenderhearted woman, and I want to make a difference in this world (we all do, don't we?). I am a writer at heart, and yes it is a passion that burns deep and strong.

Introducing "Toddler Logic"

Christie Silvers is not only a wife and mother, but a published author as well! Christie has been busy pursuing her dream, and her efforts are paying off! I have known Christie for a few years now and she is not only a fantastic writer, but a supportive and uplifting friend as well!

Legit Wat To Make Money Online

Ok, so I have no doubt you have spent countless hours searching (sometimes desperately) for a way to make some money online. What you have more than likely found is that there are indeed a lot of scams, a lot of empty promises and more ways to waste your time than you can count.

Bottom line. Making money online does require time and effort. More than likely you are not going to get rich.

That said, just wanted to share with you a way that I have made a bit of money online. Personally I am not one for selling products, keeping an inventory and keeping up with sales. I do however, like to write.

I make money by writing articles. I write what I know. I get paid. It is as simple as that.

Having been on a bit of a hiatus from having a baby, I am getting back to my writing, and am going to help my family by making a bit of cash along the way. Thought I'd share this opportunity with you all!

You, too, can do the same. I have several friends that do this on a regular basis. They are using their online money for various things, such as helping out with debt, saving for a Disney vacation, and one friend is saving her money for a tattoo she has always wanted, lol!

Mistake of WAHMs

I have been online for many years. I have spent countless hours working with and promoting other Moms in business. FIND YOUR TARGET AUDIENCE! Your target audience is NOT other WAHMs! You may get a few sales, but in reality you are wasting your time. WAHMs are looking to make money, not spend it.Tired of Spam and Ads? Well, don't advertise that way. You have to build credibility. If you join a site to network, you have to work at gaining trust from others. Don't leave biz ads in comments. Don't just email ads.Get involved. Add a personal touch. Let others get to know you. When the time is right, you can let them know about your business. Looking for affiliates? Have a relationship first. Let them know you, not just info about your biz!The internet is saturated with WAHM ads. Be different. Stand out. SHINE. If you come across as merely looking for a sale or for affiliates, you are wasting your time!

Hold Onto Your Dreams

We have to start listening to those quiet whispers.

Sure, we are caretakers by nature. Our kids, our husbands, our family and friends. But you are destined for so much more.You have a special place in this world. You are meant to feel fulfilled. Lack is not something that you have to learn to live with.

What are your gifts?

We are all unique, we bear our own strengths and weaknesses. For me, I lack the gift of organizational skills. At one time I was a perfectionist, and in my quest for perfection I died inside. I was merely a shell of the person I longed to become.

So, now in my thirties I am beginning to embrace the gifts I do have. We all have a purpose in this life. You are not a random accident, your life has meaning...you just have to take the time to search deep within to discover your own path, your own gifts and find a way to use them in this world. You are here for a reason. So, my friends, what is YOUR life purpose?

I have a gift with words. I feel a bit self-centered writing that, after all, why should I compliment myself, who do I think I am? By ignoring the talents and gifts God has granted us, we are doing both Him and ourselves a disservice.

I don't know where I go from here. I am a writer at heart. The fear of failure and ridicule paralyzes me at times. I am, however open to see where my gift leads me, and open to finding what my purpose in this life truly is.

You Have to Read THIS!

I am so excited! Some of you may remember me posting an invite to a cool new site for moms, and how you can make a little money with referrals. Well, my friends....I got paid today!!! Praise God! I actually made some real money!

What's great is that I really enjoy this site. It is similar to CafeMom and MySpace, but the owner actually does pay for referrals, $1.00 per referral to be exact!

Calling WAHMs

I have been on "maternity leave" but am getting back into the swing of things, and though I have taken a bit of a break from MUIB, I have continued to network.

That said, in the near future I will be charging for advertising on MUIB, but for all current members I will post ads for free, for life!

So...if you, or you know of anyone that could benefit from free advertising, have them join the yahoo group.

I have come to a point that with as much love, effort, sweat, and tears that I too should make a bit of a profit helping others make money for their families. My family should benefit as well!

I will be posting soon Tto the yahoo site in reference to ad info to be added to the MUIB website.


For the most active members they will have more exposure on the site, and for inactive members they will be deleted. This may sound a bit harsh, but I too put a lot of time into this endeavor, and I feel that only those that contribute should benefit.
